Granola recipe

Granola

This recipe came from a great B & B in Santa Fe, NM called "The Madeleine" which I stayed at years ago.

- 1 lg. round box old-fashioned oatmeal
- 1/2 c. wheat germ*
- 1/2 c. oat bran*
- 1/2 c. wheat bran*
- 1 T. cinnamon
- 2 t. salt
- 1 c. each: walnuts, pecans, and almonds; chopped
- 1 c. canola oil
- 1 c. honey
- 1 c. maple syrup
- 1 c. molasses
- 3 T. vanilla
- Coconut, dried fruit etc. to taste (I don't add anything.)

Preheat oven to 350 degrees. In large roasting pan**, combine oatmeal, wheat germ, oat bran, wheat bran, cinnamon, and salt. Mix in chopped nuts. Then stir in oil, honey, maple syrup, molasses, and vanilla until everything is well-coated. Bake for 30 min, stirring every 10 min so everything cooks evenly. Add dried fruits of your choice after removing from oven.

* You can find these ingredients at Another Way, the health food store off of Baytree Rd. near Mellow Mushroom in Valdosta/Remerton.

** To keep the granola chewy, I mix and bake it in a 9 x 13" pan (it barely fits), rather than a larger roasting pan. If the granola is more spread out in a larger pan, it will dry out more and be more crunchy.
